Method
- Preheat the oven to 375°F.
- Heat some oil in a frying pan and brown the beef in batches until it is nicely seared on all sides. Set aside.
- In the same frying pan, cook the onion and garlic until soft and fragrant. Add the diced potatoes and cook for another few minutes.
- Return the beef to the frying pan and add the beef stock, thyme, Worcestershire sauce, corn starch, salt, and pepper. Stir to combine and bring to a boil. Reduce heat and let simmer for 15-20 minutes until the beef is tender and the sauce has thickened.
- Transfer the mixture to a large oven-proof casserole dish.
- Roll out the puff pastry on a floured surface until it is large enough to cover the casserole dish. Cut off any excess pastry and use it to decorate the top of the pie.
- Brush the top of the pastry with beaten egg.
- Bake in the oven for 40-50 minutes until the pastry is golden brown and puffed up.
- Remove from the oven and let cool for a few minutes before serving.
