Samosas are a popular snack across India and the world. The South Indian version of samosas is slightly different from the North Indian version. The South Indian potato samosa recipe is made with a thin and crispy pastry, which is stuffed with a spicy potato filling. This recipe is perfect for tea-time snacks or as an appetizer for parties.

Ingredients:

For the pastry:

  • 2 cups of all-purpose flour
  • 1/4 cup of vegetable oil
  • 1/2 teaspoon of salt
  • Water, as needed

For the filling:

  • 3 medium-sized potatoes, boiled and mashed
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of cumin seeds
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of red chili powder
  • 1/2 teaspoon of garam masala powder
  • 1/2 teaspoon of amchur powder (dried mango powder)
  • 1 tablespoon of vegetable oil
  • Salt, to taste

Equipment:

  • Rolling Pin
  • Pastry Cutter
  • Frying Pan
  • Bowl

Method:

For the pastry:

  1. In a bowl, mix together the flour, oil, and salt.
  2. Add water, little by little, and knead the dough until it becomes smooth and elastic.
  3. Cover the dough with a damp cloth and let it rest for 30 minutes.

For the filling:

  1. Heat oil in a frying pan and add mustard seeds and cumin seeds.
  2. When they start to splutter, add mashed potatoes, turmeric powder, red chili powder, garam masala powder, and amchur powder.
  3. Mix everything well and cook for 2-3 minutes on low heat.
  4. Add salt to taste, mix well, and turn off the heat.

To make the samosas:

  1. Divide the dough into equal-sized balls.
  2. Roll out each ball into a thin circle.
  3. Cut the circle in half to make two semi-circles.
  4. Take one semi-circle and fold it into a cone shape. Seal the edges with a little water.
  5. Fill the cone with the potato filling and seal the open end with water.
  6. Repeat the process with the remaining dough and filling.
  7. Heat oil in a frying pan and fry the samosas until they are golden brown and crispy.

Notes:

  • Make sure the dough is rested for at least 30 minutes, or it will be difficult to roll out.
  • Do not overstuff the samosas, or they will burst while frying.
  • You can add peas, onions, or any other vegetables to the filling to make it more flavorful.
