South Indian Potato Samosa Recipe

Samosas are a popular snack across India and the world. The South Indian version of samosas is slightly different from the North Indian version. The South Indian potato samosa recipe is made with a thin and crispy pastry, which is stuffed with a spicy potato filling. Ingredients:
For the pastry:
- 2 cups of all-purpose flour
- 1/4 cup of vegetable oil
- 1/2 teaspoon of salt
- Water, as needed
For the filling:
- 3 medium-sized potatoes, boiled and mashed
- 1/2 teaspoon of mustard seeds
- 1/2 teaspoon of cumin seeds
- 1/2 teaspoon of turmeric powder
- 1/2 teaspoon of red chili powder
- 1/2 teaspoon of garam masala powder
- 1/2 teaspoon of amchur powder (dried mango powder)
- 1 tablespoon of vegetable oil
- Salt, to taste

Method:
For the pastry:
- In a bowl, mix together the flour, oil, and salt.
- Add water, little by little, and knead the dough until it becomes smooth and elastic.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
For the filling:
- Heat oil in a frying pan and add mustard seeds and cumin seeds.
- When they start to splutter, add mashed potatoes, turmeric powder, red chili powder, garam masala powder, and amchur powder.
- Mix everything well and cook for 2-3 minutes on low heat.
- Add salt to taste, mix well, and turn off the heat.
To make the samosas:
- Divide the dough into equal-sized balls.
- Roll out each ball into a thin circle.
- Cut the circle in half to make two semi-circles.
- Take one semi-circle and fold it into a cone shape. Seal the edges with a little water.
- Fill the cone with the potato filling and seal the open end with water.
- Repeat the process with the remaining dough and filling.
- Heat oil in a frying pan and fry the samosas until they are golden brown and crispy.
Notes:
- Make sure the dough is rested for at least 30 minutes, or it will be difficult to roll out.
- Do not overstuff the samosas, or they will burst while frying.
- You can add peas, onions, or any other vegetables to the filling to make it more flavorful.
