Ingredients

  • 4 large potatoes
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 green chillies, chopped
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tbsp vegetable oil
  • Salt to taste
  • Water as required

  • A mixing spoon

Method

  1. Peel and chop the potatoes into small pieces.
  2. Heat oil in a large pot and add cumin seeds and mustard seeds.
  3. When the seeds start to crackle, add onion and green chillies and sauté for 2-3 minutes.
  4. Add ginger paste and garlic paste and cook for another minute.
  5. Add chopped tomatoes and cook until they turn mushy.
  6. Add turmeric powder, red chilli powder, coriander powder, and garam masala powder and mix well.
  7. Add the chopped potatoes and salt to taste and mix well.
  8. Add enough water to cover the potatoes and cook until the potatoes are tender.
  9. Simmer the curry for 5-10 minutes until it has thickened to your liking.
  10. Garnish with fresh coriander leaves and serve hot with rice or roti.

Notes

Make sure to keep an eye on the curry as it simmers, and add more water if necessary. Adjust the amount of chilli powder depending on your spice preference.
