Method

  1. Preheat the oven to 350 degrees F.

  3. In a medium saucepan, combine the brown sugar and water. Cook over medium heat, stirring constantly, until the sugar has dissolved and the mixture has thickened slightly.
  4. Pour the sugar mixture into the bottom of a 9-inch cake pan, spreading it out evenly.
  5. Pour the sweet potato mixture over the sugar mixture in the cake pan.
  6. Place the cake pan in a larger baking dish or roasting pan. Fill the larger pan with enough water to come halfway up the sides of the cake pan.
  7. Bake for 1 hour and 15 minutes, or until the flan is set and a toothpick inserted into the center comes out clean.
  8. Remove the flan from the oven and let it cool to room temperature.
  9. Refrigerate the flan for at least 2 hours, or until chilled.
  10. To serve, run a knife around the edge of the cake pan to loosen the flan. Invert the pan onto a serving platter and carefully remove the cake pan.
