Ingredients

  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup evaporated milk
  • 1/2 teaspoon cayenne pepper

Method

For the crust:

1. In a food processor or mixing bowl, combine the flour and salt. 2. Add the cubed butter and pulse or use a pastry blender until the mixture resembles coarse crumbs. 3. Slowly add the ice water, 1 tablespoon at a time, and pulse or mix until the dough comes together. 4. Form the dough into a ball and flatten into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes. 5. Preheat the oven to 350°F. 6. On a floured surface, roll out the dough to fit a 9-inch pie dish. 7. Transfer the dough to the pie dish and trim the edges. 8. Chill the crust in the refrigerator for 10-15 minutes.

For the filling:

1. In a mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, salt, cinnamon, ginger, nutmeg, cloves, vanilla extract, and cayenne pepper. Mix well. 2. Add the eggs and mix until well combined. 3. Gradually stir in the evaporated milk until well combined. 4. Pour the filling into the chilled pie crust. 5. Bake for 1 hour and 15 minutes, or until the filling is set. 6. Remove from the oven and let cool before serving.

Notes

Make sure to use freshly mashed sweet potatoes for the filling to get the best flavor. If you don't have a food processor or pastry blender, you can use your fingers to mix the butter into the flour. To make the crust ahead of time, you can freeze the dough for up to 3 months.
