Ingredients
2 pounds of potatoes, peeled and cubed
1/2 red onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/4 cup of chopped fresh parsley
1/4 cup of spicy brown mustard
1/4 cup of mayonnaise
2 tablespoons of apple cider vinegar
2 tablespoons of honey
1 teaspoon of salt
1/2 teaspoon of black pepper
Equipment
A large pot
A mixing bowl
A whisk
A large spoon
A knife and cutting board
Method
Fill a large pot with water and bring to a boil.
Add the cubed potatoes to the boiling water and cook for approximately 10-12 minutes or until tender.
While the potatoes are cooking, prepare the dressing. In a mixing bowl, whisk together the spicy brown mustard, mayonnaise, apple cider vinegar, honey, salt, and black pepper.
Once the potatoes are cooked, drain them and rinse them with cold water to stop the cooking process.
In a large mixing bowl, combine the cooked potatoes, diced red onion, diced red and green bell pepper, and chopped fresh parsley.
Pour the dressing over the potato mixture and stir until everything is well coated.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
Before serving, give the potato salad a good stir and adjust seasoning if necessary.
Garnish with additional chopped parsley if desired.

Notes
This potato salad can be made up to 24 hours in advance and stored in the refrigerator until ready to serve. If the salad seems dry, add a little bit more mayonnaise or apple cider vinegar.
