Ingredients

  • 2 cups of soya chunks
  • 2 potatoes, diced
  • 2 onions, finely chopped
  • 3 tomatoes, finely chopped
  • 1 tablespoon of ginger paste
  • 1 tablespoon of garlic paste
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of garam masala powder
  • 1 teaspoon of red chili powder
  • 2 tablespoons of vegetable oil
  • Salt to taste
  • Water as needed
  • Fresh coriander leaves for garnish

Method

  1. Soak the soya chunks in hot water for around 10 minutes.
  2. Heat oil in a large pot and add cumin seeds.
  3. Once the seeds start to splutter, add finely chopped onions and saute until they turn golden brown.
  4. Add ginger paste and garlic paste and fry for a minute.
  5. Add finely chopped tomatoes and cook until the mixture turns into a thick paste.
  6. Add coriander powder, turmeric powder, red chili powder, and garam masala powder and fry for a minute.
  7. Add diced potatoes and soaked soya chunks and mix well.
  8. Add enough water to cover the potatoes and soya chunks and bring it to a boil.
  9. Cover the pot and let it cook on low heat until the potatoes and soya chunks are fully cooked.
  10. Garnish with fresh coriander leaves and serve hot with rice or roti.

Notes

  • You can adjust the spiciness of the curry by adding more or less red chili powder.
  • You can also add other vegetables such as carrots or peas to this curry.
  • If you want to make this curry more creamy, you can add a few tablespoons of coconut milk or cream.
  • You can also use frozen soya chunks instead of dry ones.
