Ingredients

For the sweet potato layer, you will need:
  • 2 pounds sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/2 cup coconut milk
  • 1/4 cup butter, melted
  • 1 teaspoon vanilla extract

  • 1/2 cup sugar
  • 1/2 cup cornstarch
  • 1/2 cup water

Equipment

  • Large pot
  • Baking dish
  • Mixing bowls
  • Whisk

Method

1. Preheat the oven to 350°F. 2. In a large pot, boil the sweet potatoes until they are soft, about 15-20 minutes. 3. Drain the sweet potatoes and mash them in a mixing bowl. 4. Add the brown sugar, coconut milk, melted butter, vanilla extract, cinnamon, and nutmeg to the sweet potato mixture. Mix well. 5. Pour the sweet potato mixture into a baking dish and bake for 20-25 minutes. 6. In a separate mixing bowl, whisk together the coconut milk, sugar, and cornstarch. 7. In a saucepan, bring the water to a boil. 8. Slowly add the coconut milk mixture to the boiling water, whisking constantly. 9. Continue whisking until the mixture thickens, about 5-7 minutes. 10. Pour the haupia mixture over the baked sweet potato layer and chill in the refrigerator for at least 1 hour.

Notes

Make sure to let the sweet potato layer cool before pouring the haupia mixture on top. This will prevent the haupia from melting and becoming too runny.
