Method
Preheat the oven to 400°F (200°C).
Wash and scrub the potatoes thoroughly, then dry them with a paper towel.
Pierce the potatoes several times with a fork to allow steam to escape while baking.
Place the potatoes on a baking sheet and bake for 45-50 minutes, or until they are tender and cooked through.
Remove the potatoes from the oven and allow them to cool for 10-15 minutes.
Cut off the top of each potato and scoop out the flesh using a spoon or a melon baller, leaving about 1/4 inch of potato flesh around the skin.
In a mixing bowl, combine the potato flesh, cream cheese, sour cream, melted butter, chopped green onions, cheddar cheese, salt, and pepper. Mix everything together until well combined.
Spoon the mixture back into the potato skins and sprinkle some extra cheddar cheese on top.
Place the stuffed potatoes back on the baking sheet and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Remove the potatoes from the oven and let them cool for a few minutes before serving.
Notes
You can add other ingredients to the stuffing mixture such as bacon bits, cooked spinach, or diced bell peppers to add more flavor and texture.
