Cook Time: 20 minutes
Ingredients
- 6 large potatoes
- 1 pound ground beef or pork
- 1 onion, diced
- 3 cloves garlic, chopped
- 1 red bell pepper, diced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup bread crumbs
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- Vegetable oil for frying
Equipment
- Large pot
- Skillet
- Mixing bowl
- Fork
- Slotted spoon
- Food processor (optional)
Method
- Peel and chop the potatoes into small pieces. Boil them in a large pot of salted water until they are soft and tender.
- While the potatoes are cooking, heat a skillet over medium-high heat. Add the ground beef or pork and cook until browned.
- Add the onion, garlic, and red bell pepper to the skillet and cook until softened, about 5 minutes.
- Season the meat mixture with smoked paprika, salt, and pepper to taste. Remove from heat and set aside.
- Drain the potatoes and return them to the pot. Mash them with a fork or use a food processor until they are smooth.
- Add the bread crumbs to the mashed potatoes and mix until well combined.
- Take a small handful of the mashed potato mixture and flatten it in the palm of your hand. Add a spoonful of the meat mixture to the center of the potato and shape the potato around the filling, forming a ball. Repeat until all the potato mixture is used.
- Place the flour, beaten eggs, and bread crumbs in separate bowls. Dip each potato ball in the flour, then the eggs, and finally the bread crumbs, making sure they are coated evenly.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the potato balls in batches until they are golden brown and crispy on the outside, about 3-4 minutes per side.
- Remove the potato balls from the skillet with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve the Spanish potato balls hot with your favorite dipping sauce.
