Ingredients

  • 2 cups grated sweet potato
  • 4 cups whole milk
  • 1/2 cup sugar
  • 1/4 cup chopped cashews
  • 1/4 cup raisins
  • 1 tbsp ghee
  • 1/2 tsp cardamom powder

  • Wooden spoon
  • Bowl

Method

  1. Wash and peel the sweet potatoes. Grate them and keep aside.
  2. In a large saucepan, heat ghee over medium heat. Add grated sweet potatoes and stir for 2-3 minutes.
  3. Add milk to the pan and bring it to boil. Reduce the heat to low and let it simmer for 20 minutes or until the sweet potatoes are cooked.
  4. Stir in sugar, cardamom powder, chopped cashews and raisins. Simmer for another 5 minutes.
  5. Remove the pan from heat and let it cool for a few minutes.
  6. Pour the kheer into a bowl and let it chill in the refrigerator for at least 2 hours before serving.
  7. Garnish with chopped cashews and raisins before serving.

Notes

  • You can adjust the amount of sugar according to your taste.
  • If you prefer a thinner consistency, you can add more milk.
  • Make sure to stir the kheer regularly while cooking to prevent it from sticking to the bottom of the pan.
