Ingredients

  • 6 medium potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes

Method

  1. Place the cubed potatoes in a large pot and cover them with water. Bring to a boil and cook until the potatoes are tender, about 10 minutes. Drain and set aside.

  4. Bring the soup to a simmer and cook for 10-15 minutes, stirring occasionally, until it has thickened.
  5. Puree the soup in a blender until smooth. Return the soup to the pot.
  6. Stir in the shredded cheddar cheese and sour cream until melted and smooth.
  7. Add the cooked potatoes and bacon to the pot and stir to combine.
  8. Simmer the soup for 5-10 minutes until heated through.
