Method

1. In a large mixing bowl, whisk together the flour and salt for the crust. 2. Add the chilled and cubed butter to the flour mixture and use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse sand. 3. Add 4-6 tablespoons of ice water, one tablespoon at a time, until the dough comes together in a ball. 4. Flatten the dough into a disc and wrap it in plastic wrap. Refrigerate for at least 30 minutes. 5. Preheat the oven to 375°F (190°C). 6. Roll out the chilled dough on a lightly floured surface until it is approximately 1/8 inch thick. 7. Place the dough into a 9-inch pie dish and trim the edges. 8. Line the crust with parchment paper and fill it with baking beans or rice. 9. Bake the crust for 15 minutes, then remove the parchment paper and baking beans or rice and bake for an additional 10 minutes until the crust is lightly golden. Set aside to cool. 10. In a large mixing bowl, whisk together the mashed sweet potatoes, granulated sugar, brown sugar, salt, cinnamon, nutmeg, and ginger for the filling. 11. Add the beaten eggs, evaporated milk, melted butter, and vanilla extract to the sweet potato mixture and whisk until smooth. 12. Pour the sweet potato filling into the cooled crust. 13. Bake the pie for 45-50 minutes until the filling is set and a toothpick inserted into the center comes out clean. 14. Cool the pie on a wire rack for at least 2 hours before serving.
