Cook Time

The cooking time for this dish is approximately 15 minutes.

Ingredients

  • 2 large potatoes, peeled and chopped
  • 1 cup of fresh spinach leaves
  • 1 egg, lightly beaten
  • 1 1/2 cups of all-purpose flour
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of grated parmesan cheese
  • 2 tablespoons of butter
  • 1/4 cup of chopped fresh basil

Equipment

  • Pot
  • Large mixing bowl
  • Fork
  • Knife
  • Frying pan
  • Slotted spoon

Method

  1. Boil the potatoes until they are soft and tender. Drain the water and allow the potatoes to cool.
  2. Place the cooled potatoes in a large mixing bowl and mash them until they are smooth.
  3. Finely chop the fresh spinach leaves and add them to the mashed potatoes. Mix well.
  4. Add the lightly beaten egg, all-purpose flour, salt, black pepper, and grated parmesan cheese to the mixing bowl. Mix all the ingredients together until they form a dough.
  5. Dust a clean surface with flour and knead the dough for a few minutes until it becomes smooth and elastic.
  6. Divide the dough into small portions and roll each portion into a long, thin rope.
  7. Cut the ropes into small pieces and gently press each piece with a fork to create ridges.
  8. Boil a pot of salted water and add the gnocchi to the boiling water. Cook for 2-3 minutes or until the gnocchi floats to the surface of the water.
  9. In a frying pan, melt the butter over medium heat. Add the chopped fresh basil and sauté for a few seconds.
  10. Using a slotted spoon, transfer the cooked gnocchi to the frying pan with the melted butter and basil. Gently toss the gnocchi in the butter until they are coated.
  11. Plate the gnocchi and sprinkle with extra parmesan cheese and black pepper.

Notes

  • You can substitute the fresh spinach with frozen spinach if you prefer.
  • Be careful not to overwork the dough or the gnocchi will become tough.
  • Leftover gnocchi can be stored in an airtight container in the refrigerator for up to 3 days.
