Ingredients

- 6 slices of bacon - 3 cups of potatoes, peeled and diced - 1 onion, chopped - 2 cloves of garlic, minced - 4 cups of chicken broth - 1 cup of heavy cream - 1 teaspoon of salt - 1/2 teaspoon of black pepper - 1 tablespoon of fresh thyme leaves

- Large pot - Wooden spoon - Cutting board - Knife - Measuring cups and spoons

Method

1. Cook the bacon in a large pot until crispy. Remove from the pot and set aside on a paper towel-lined plate to cool. 2. Add the chopped onion to the pot and sauté until soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional minute. 3. Add the diced potatoes, chicken broth, salt, and black pepper to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are soft, about 15-20 minutes. 4. In a separate pot, heat the heavy cream until warm. 5. Using an immersion blender, blend the soup until smooth and creamy. 6. Stir in the warm heavy cream and fresh thyme leaves. 7. Crumble the cooled bacon and sprinkle over the top of the soup.

Notes

- If you don't have an immersion blender, you can use a regular blender to blend the soup in batches. - For a vegetarian version, you can leave out the bacon and use vegetable broth instead of chicken broth.
