Ingredient

For the steak: - 2 ribeye steaks - Salt and pepper - 2 tablespoons olive oil - 2 tablespoons unsalted butter - 4 cloves garlic, minced - 2 sprigs fresh rosemary - 2 sprigs fresh thyme For the asparagus: - 1 pound asparagus, trimmed - 2 tablespoons olive oil - Salt and pepper For the mashed potatoes: - 4 large potatoes, peeled and cubed - 1/2 cup unsalted butter - 1/2 cup heavy cream - Salt and pepper

Method

1. Preheat the oven to 400 degrees Fahrenheit. 2. Bring a large pot of salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. 3. While the potatoes are cooking, season the steaks with salt and pepper on both sides. 4. Heat the olive oil in a large skillet over medium-high heat. Add the steaks and cook for 3-4 minutes on each side. Remove from the skillet and set aside on a plate. 5. In the same skillet, add the butter, garlic, rosemary, and thyme. Cook for 1-2 minutes until the butter is melted and the herbs are fragrant. 6. Place the steaks on a baking sheet and pour the garlic herb butter over them. Place in the oven and bake for 10-12 minutes for medium-rare or until the desired doneness is reached. 7. While the steaks are baking, toss the trimmed asparagus with olive oil, salt, and pepper on a baking sheet. Roast in the oven for 10-12 minutes. 8. Drain the cooked potatoes and add the butter and heavy cream. Mash until desired consistency is reached. Season with salt and pepper to taste. 9. Serve the steak with the asparagus and mashed potatoes.
