- 6 large baking potatoes
- 1 pound chorizo sausage, cooked and crumbled

- 1/2 teaspoon cumin

Method
- Preheat the oven to 400°F.
- Wash the potatoes and pierce each one with a fork a few times. Place them on a baking sheet and bake for 45 minutes to 1 hour, or until they are tender.
- Remove the potatoes from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato flesh in the skin.

- Spoon the mixture back into the potato skins, dividing it evenly among all the skins.
- Place the filled potato skins back on the baking sheet and bake for another 15 minutes, or until the cheese is melted and bubbly.
