Ingredients

  • 6 large baking potatoes
  • 1 pound chorizo sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Equipment

  5. In a mixing bowl, combine the chorizo, shredded cheese, sour cream, cilantro, garlic powder, chili powder, cumin, salt, and pepper. Mix well.
  6. Using a potato masher or fork, mash the scooped-out potato flesh until it is smooth.
  7. Add the mashed potato flesh to the chorizo mixture and stir until well combined.
  8. Spoon the mixture back into the potato skins, dividing it evenly among all the skins.
  9. Place the filled potato skins back on the baking sheet and bake for another 15 minutes, or until the cheese is melted and bubbly.
  10. Serve hot, garnished with extra cilantro if desired.
