Ingredients

  • 1 pound baby potatoes
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Equipment

  • Large pot
  • Colander
  • Large skillet
  • Wooden spoon

Method

  1. Add the baby potatoes to a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.
  2. Drain the potatoes in a colander and set aside.
  3. In a large skillet, melt the butter over medium heat.
  4. Add the minced garlic and dried thyme to the skillet and cook for 1-2 minutes or until fragrant.
  5. Add the cooked potatoes to the skillet and toss to coat in the garlic and thyme butter.
  6. Season with salt and black pepper, to taste.
  7. Cook for an additional 5-7 minutes or until the potatoes are slightly golden and crispy on the outside.
  8. Sprinkle the grated Parmesan cheese over the top of the potatoes and toss to combine.
  9. Remove from heat and serve immediately.

Notes

For a vegan version of this recipe, simply substitute the butter with a vegan butter or margarine.
