- 1 pound baby potatoes
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese

- Large skillet
- Wooden spoon
Method
- Add the baby potatoes to a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes or until the potatoes are tender when pierced with a fork.
- Drain the potatoes in a colander and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and dried thyme to the skillet and cook for 1-2 minutes or until fragrant.
- Add the cooked potatoes to the skillet and toss to coat in the garlic and thyme butter.
- Season with salt and black pepper, to taste.
- Cook for an additional 5-7 minutes or until the potatoes are slightly golden and crispy on the outside.
- Sprinkle the grated Parmesan cheese over the top of the potatoes and toss to combine.
- Remove from heat and serve immediately.
Notes
