Ingredients

  • 6 large potatoes
  • 6 slices of bacon
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of sour cream
  • 1/2 cup of heavy cream
  • 3 cups of chicken broth
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper to taste

Equipment

  • Baking sheet
  • Large pot
  • Blender or immersion blender

Method

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and dry the potatoes and pierce them with a fork. Place them on the baking sheet and bake for 50-60 minutes or until they are tender.
  3. While the potatoes are baking, cook the bacon in a large pot until crispy. Remove the bacon from the pot and set it aside on a paper towel. Leave the bacon grease in the pot.
  4. Add the chicken broth, garlic powder, onion powder, salt, and pepper to the pot with the bacon grease and bring it to a simmer.
  5. Once the potatoes are done, let them cool for a few minutes and then cut them in half lengthwise. Use a spoon to scoop out the flesh and add it to the pot with the chicken broth.
  6. Use an immersion blender or regular blender to blend the soup until it is smooth and creamy.
  7. Add the heavy cream, sour cream, and shredded cheddar cheese to the soup and stir until the cheese is melted and the soup is heated through.
  8. Crumble the bacon and use it as a garnish on top of the soup.
  9. Serve hot and enjoy!

Notes

If you don't have an immersion blender or a regular blender, you can use a potato masher to mash the potatoes in the pot.
